Sweet Potato-Raisin Muffins |

This is a good way to get kids to eat sweet potatoes or use up leftovers. Ingredients:
1 3/4 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon nutmeg |
1/2 teaspoon cinnamon |
1 egg |
1/2 cup brown sugar |
1/4 cup unsweetened applesauce |
1/4 cup evaporated skim milk |
1/2 cup sweet potato, cooked and mashed |
1/2 cup canola oil (or other cooking oil) |
1/2 cup raisins |
Directions:
1. Preheat oven to 350. 2. Line muffin pan with liners or spray with cooking spray. 3. In a large bowl, blend dry ingredients until well combined. 4. In a separate bowl, mix remaining ingredients until well blended; add to dry ingredients and mix until just combined. 5. Spoon batter into each muffin cup until 3/4 full. 6. Bake for 25 minutes , until golden brown. 7. Cool 5 minutes on wire rack. |
