From a friend... Ingredients:
1/4 teaspoon salt |
2 cups flour |
2 teaspoons cinnamon |
1 teaspoon baking soda |
1/4 teaspoon baking powder |
1 1/4 cups sugar |
1 (15 ounce) can sweet potatoes, in heavy sauce (drained and mashed) |
1/4 cup vegetable oil |
3 eggs |
1 teaspoon vanilla |
3/4 cup chopped walnuts |
1/2 cup raisins |
Directions:
1. Preheat oven to 350~. 2. Butter and flour 9 X 5 loaf pan. 3. Combine salt, flour, cinnamon, baking soda, and baking powder. 4. In a large bowl combine, sugar, sweet potatoes, vegetable oil, eggs, and vanilla. 5. Stir in dry ingredients, add walnuts and raisins. 6. Transfer to pan and bake for 1 hour. |
