Here is a fun twist on traditional marshmallow-covered sweet potatoes that the whole family will love. It’s great all year round, but particularly nice with your Thanksgiving turkey. Ingredients:
1 (29-ounce) can sweet potatoes, drained |
1/2 cup sugar |
5 tablespoons butter, softened |
1/2 teaspoon ground nutmeg |
8 large marshmallows |
2 cups crushed cornflakes |
Directions:
1. Preheat the oven to 350F. Grease a 2-quart shallow baking dish. 2. Mash the sweet potatoes in a large bowl. Stir in the sugar, butter and nutmeg. Shape the mixture into 8 balls and press a marshmallow into each. Coat the balls with cornflakes and flatten slightly. 3. Arrange the balls in the prepared baking dish. Bake until lightly browned, 10 to 15 minutes. |
