This is a delicious side - sweet, but not over the top. I could easily eat this as my main course (or dessert, for that matter). Ingredients:
4 cups mashed sweet potatoes |
1/2 cup sugar |
2 eggs |
1/2 cup milk |
1/2 teaspoon salt |
1/4 cup butter, melted |
1 teaspoon vanilla |
1/2 cup brown sugar |
1/2 cup all-purpose flour |
1/3 cup butter (melted) or 1/3 cup margarine (melted) |
1 cup pecans |
Directions:
1. Preheat oven to 350°F. 2. Butter a souffle dish generously. 3. Mix all the souffle ingredients well and pour into buttered dish. 4. Combine all topping ingredients in a small bowl and crumble evenly over potato mixture. 5. Bake for 35-45 minutes. |
