A great dish for those cold winter evenings. Ingredients:
3 cups grated sweet potatoes |
4 teaspoons butter |
1 cup sugar |
1 cup flaked coconut |
1 teaspoon pumpkin spice |
1/3 cup cornmeal |
1 cup buttermilk |
1/2 teaspoon baking soda |
Directions:
1. Mix all ingredients. 2. Pour into a greased baking dish. 3. Bake for approximately 75 minutes at 350 degrees. |
