An old-timey comfort food from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
4 cups sweet potatoes (uncooked, peeled and grated) |
1 cup brown sugar |
1 cup molasses |
1/2 cup butter |
1 teaspoon ground ginger |
1/2 teaspoon cinnamon |
1/2 teaspoon allspice |
1/2 teaspoon salt |
1/4 teaspoon ground cloves |
1/2 teaspoon dried orange peel, grated |
Directions:
1. Preheat oven to 300°F. 2. Combine ingredients and mix thoroughly; transfer to greased shallow pan or skillet and bake for about 2 hours. 3. Serve hot with a hard sauce or cold with whipped cream. |
