An old-timey comfort food from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Ingredients:
4 cups sweet potatoes (uncooked, peeled and grated)
1 cup brown sugar
1 cup molasses
1/2 cup butter
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon dried orange peel, grated
Directions:
1. Preheat oven to 300°F.
2. Combine ingredients and mix thoroughly; transfer to greased shallow pan or skillet and bake for about 2 hours.
3. Serve hot with a hard sauce or cold with whipped cream.
