Sweet Potato Pineapple Bake |

Sweet potatoes aren't just for holidays. I always keep some around just in case I come across recipes like this one. I could eat this for dessert. Ingredients:
3 cups cooked mashed sweet potatoes |
1/2 cup sugar |
1/2 cup milk |
1/4 cup butter-melted |
2 eggs-lightly beaten |
1 teaspoon vanilla extract |
2 teaspoons pumpkin pie spice-or to taste |
pinch of salt(omit if using salted butter) |
pineapple topping |
1/4 cup sugar |
1/4 cup all purpose flour |
1 8oz can crushed pineapple-undrained |
1/4 cup butter-melted |
2 eggs |
Directions:
1. In a large bowl, combine the first eight ingredients. Mix well. 2. Pour into a lightly greased 9 square baking dish. 3. Combine topping ingredients. 4. Pour over potato mixture. 5. Bake uncovered at 350 degrees for 45-50 minutes or until knife inserted near center comes out clean. 6. Serve hot. Refrigerate leftovers. |
