I haven’t tried this yet, but it looks really yummy! Serve with roast chicken or turkey. 4 servings 45 min. Ingredients:
1 tablespoon oil |
1 onion, diced |
10 button mushrooms, chopped |
2 garlic cloves, minced |
3 cups water |
1 medium sweet potato, peeled and diced |
1 cup long grain brown rice |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon curry powder |
1/2 cup orzo pasta |
2 scallions, chopped |
Directions:
1. Heat oil in a saucepan and sauté onions, mushrooms and garlic for 5 minutes. 2. Add water, sweet potato, rice and spices. Bring to a simmer. 3. Add the orzo and cover. Reduce heat and cook until all the liquid is absorbed. Remove from heat and fluff with a fork. 4. Stir in scallions and serve hot. |
