I got this recipe while watching the Frugal Gourmet television show in the early 1990s. It is a nice change from pumpkin pie. Ingredients:
9 deep dish pie shell |
2 cups cooked red sweet potatoes, drained and mashed |
3 eggs |
4 tablespoons margarine |
1 cup sugar |
1 teaspoon vanilla |
1/2 cup bourbon |
1 tablespoon flour |
1 teaspoon nutmeg |
1 1/2 tablespoons lemon juice |
Directions:
1. Blend all ingredients (except the pie shell) together, mixing well. 2. Pour blended mixture into the pie shell and bake at 350 F until set. 3. Cool and top with whipped cream for serving. |
