A luscious combination of two Southern favorites. The perfect Thanksgiving pie. Sweet potatoes and pecans make such a wonderful combination. This recipe comes from The Colony House in Charleston, SC. Ingredients:
1 cup cooked, mashed sweet potato |
1/4 cup light brown sugar |
1 egg, slightly beaten |
1 t. heavy cream |
1 t. butter |
1 t. vanilla |
1/4 t. salt |
1 t. cinnamon |
1/4 t. nutmeg |
1 8 or 9 inch prebaked pie shell |
3/4 cup sugar |
3/4 cup dark corn syrup |
2 eggs, slightly beaten |
1 1/2 t. melted butter |
2 t. vanilla |
pinch of salt |
1/2 t. cinnamon |
1 cup pecans, broken |
Directions:
1. Combine first 9 ingredients and mix until well incorporated. Pour into pieshell. 2. Combine all remaining ingredients and pour over filling in pie shell. 3. Bake in a preheated 350 degree oven for about 40 minutes or until filling is set. |
