Sweet potato pecan pie. A family favorite. Serve wiith fresh whipped cream. Ingredients:
one prepared pie crust |
filling |
2 cups cooked mashed sweet potato |
3/4 cup sugar |
2 large eggs, lightly beaten |
1/2 tsp salt |
1.4 tsp nutmeg |
1 tsp cinnamon |
1/4 tsp allspice |
1/2 tsp vanilla |
2/3 cup sweetened condenced milk |
the topping |
1 cup coursley chopped pecans |
2 large eggs, beaten |
2 tablespoons butter softened |
2 tsp vanilla |
1/2 cup sugar |
1/2 cup dark corn syrup |
pinch of salt |
1/8 tsp cinnamon |
Directions:
1. Preheat oven to 325 2. Roll out pie crust and place in a 9 inch deep dish pie plate 3. Add all ingredients of filling into mixer and mix well. 4. In seperate bowl mix all ingredients for the topping 5. Place pie plate on drip tray as filling may drip over. 6. Spoon the filling into the pie crust and smooth out. 7. Pour topping over the top. 8. Bake in oven for hour and half or until crust is golden and filling is set. 9. Serve at room temp with fresh whipped cream. |
