Sweet Potato Pecan Casserole |

Great Sweet Potato Casserole with a crunchy pecan topping! Serve it with grilled chicken breasts and a light salad. Ingredients:
4 large sweet potatoes or |
2 23 oz. sweet potatoes canned and drained |
1 stick butter, softened |
1 eggs |
1/2 tsp vanilla |
1/2 tsp nutmeg |
1/2 tsp cloves |
1/2 tsp cinnamon |
1/2 tsp allspice |
1/2 cup brown sugar (firmly packed) |
1 5 oz. evaporated milk (can) |
dash salt |
topping |
1 cup brown sugar (not firmly packed) |
1 cup pecans, chopped |
1/2 cup flour (all-purpose) |
1/2 stick butter, melted |
Directions:
1. Cook, drain and mash sweet potatoes OR drain the canned sweet potatoes. Heat and mash. Add all ingredients (except TOPPING ingredients) and mix well. Pour into casserole dish sprayed with cooking spray. 2. TOPPING - Mix brown sugar and flour together. Then mix in the pecans. Add the melted butter last. (Usually looks crumbly. ) 3. Spread topping over the casserole and bake in 350 degree oven for 25-30 minutes. |
