Sweet Potato Pecan Casserole |

Quick, easy, yummy! Ingredients:
4 sweet potatoes (about 2 lbs total) |
2 large egg whites |
2 tbsp honey or packed dark brown sugar |
1 tbsp butter |
1/4 tsp salt |
1/4 tsp nutmeg |
1/4 tsp cinnamon |
4 tbsp finely chopped pecans |
Directions:
1. Peel and quarter the sweet potatoes then place in a large saucepan. 2. Cover with water then bring to a boil over high heat then lower heat to simmer for about 25 minutes. Drain. 3. In a large bowl, beat the potatoes with an electric mixer until smooth, then add the egg whites, honey, butter, salt, and spices. Beat until light and fluffy. 4. Spoon the mixture into an 8 inch baking pan then sprinkle with pecans. 5. Bake in a 350 degree for about 25 minutes or until heated through. |
