Sweet Potato & Pecan Casserole |

We just love this stuff!!!!! Got this recipe from a crock pot cookbook and I served this on Thanksgiving - what a hit! Ingredients:
40 ounces sweet potatoes, peeled and cubed |
1/2 cup apple juice |
1/3 cup butter, melted and divided |
2 tablespoons butter, melted and divided |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/4 teaspoon black pepper |
2 eggs, beaten |
1/3 cup pecans, chopped |
1/3 cup brown sugar |
2 tablespoons flour |
Directions:
1. Lightly grease 4 1/2 quart crock pot. 2. Combine sweet potatoes, apple juice, 1/3 cup butter, salt, cinnamon and pepper in a large bowl. 3. Beat in eggs. 4. Place mixture into crock pot. 5. Combine pecans, brown sugar and 2 tbsp butter in a small bowl and spread over sweet potatoes. 6. Cover, cook on high 3-4 hrs, or on low for 7 to 8 hours. |
