These are incredible. Tried and true and loved by all. I often serve these as mini cakes for a side on a nice dinner. Enjoy Ingredients:
1 pound sweet potatoes peeled and shredded |
1 small white onion minced |
3 cloves garlic minced |
2 teaspoons dried tarragon |
1 teaspoon salt |
1/4 teaspoon fresh ground pepper |
2 tablespoons dried bread crumbs |
2 eggs lightly beaten |
1 tablespoon butter |
2 tablespoons vegetable oil |
Directions:
1. Place shredded sweet potatoes in a medium bowl. 2. Stir in onion, garlic, tarragon, salt, pepper, bread crumbs and eggs. 3. In a large skillet over medium heat melt butter with oil. 4. For each pancake place 2 heaping tablespoons sweet potato mixture in pan and flatten. 5. Cook until each side is browned and appears dry then serve immediately. |
