Sweet potatoes are packed with vitamin A, and lovely baked, and are great in casseroles and stews. These pancakes are a perfect accompaniment to grilled meats and roasts, and are equally delicious with poultry and fish. Ingredients:
1 large sweet potato, grated |
1/4 cup red onion, grated |
2 tbsp cilantro |
1 egg |
1/4 cup spelt flour |
1/4 tsp salt |
1/4 cup olive oil |
Directions:
1. Wash and rinse sweet potato, but do not peel. Grate over a large plate. Add grated onion and cilantro. Mix in egg and flour until will incorporated, then add salt. The mixture will become loose, but will form patties. In a large skillet, heat oil and carefully fry pancakes. 4-5 minutes on each side. Keep warm in a 250 degree oven until ready to serve up to 1 hour. Makes 6 large dinner pancakes or 15 small appetizer cakes. |
