Adapted from Geema's Sweet Potato Pecan Pancakes Ingredients:
1 1/4 cups whole wheat flour |
1/4 cup ground flax seeds |
2 1/4 teaspoons baking powder |
2 teaspoons pumpkin pie spice |
1/4 teaspoon salt |
1 1/2 cups 2% low-fat milk |
2 tablespoons brown sugar |
1 tablespoon canola oil |
2 teaspoons vanilla |
2 eggs, lightly beaten |
3/4 cup sweet potato, steamed and mashed |
Directions:
1. Combine dry ingredients. 2. In blender, puree remaining (wet) ingredients. 3. Mix wet and dry ingredients. 4. Cook according to pancake skillet directions. |
