This is a quick recipe from Simply Great Food a Canadian Dietitians cookbook. Kid friendly. Serving idea: for great start to your day, serve with a piece of ruit and glass milk. Ingredients:
2 eggs |
1 cup shredded peeled sweet potato |
1/2 cup chopped onion |
1 garlic clove, chopped |
1 teaspoon salt or 1 teaspoon soy sauce |
1 tablespoon vegetable oil |
Directions:
1. 1. In a small bowl, beat eggs with a fork. Stir in sweet potatoes, onion, garlic and salt until well combined. 2. 2. Heat a medium skillet over medium-high heat. Add oil and swirl to coat the pan. Pour in egg misture; cook, turning once, until lightly browned on both sides, about 2 minutes per side. |
