Sweet Potato Marshmellow Gratin

I love this. Only 116 calories per 1/2 cup serving!
Ingredients:
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon vanilla extract
1/2 cup orange juice
5 sweet potatoes, peeled and cut into 1/8-inch- thick slices
2 russet potatoes, peeled and cut into 1/8-inch-thick slices
cooking spray
1 1/2 cups mini-marshmellows
1 tablespoon brown sugar
Directions:
1. Preheat oven to 350 degrees.
2. Mix cinnamon, nutmeg, vanilla extract, and orange juice in a small bowl.
3. In a large bowl, combine potatoes.
4. Pour orange juice mixture over the potatoes and toss to coat well.
5. Spray an 8 x 8 baking dish with cooking spray.
6. Place potatoes, a handful at a time, in the dish and spread them so that the orange and white slices are evenly distributed.
7. Sprinkle 10 - 12 mini-marshmellows on top of this layer.
8. Repeat the process tp create 5 layers.
9. Cover the dish with aluminum foil.
10. Bake for 1 hour.
11. Remove from oven and top with remaining marshmellows and brown sugar.
12. Re-cover with foil and bake for an additional 30 minutes.
13. Let stand at least 15 minutes and then serve.
