this recipe make 2 small loaves of bread... the recipe is cut out of a Country Woman magazine... I have no idea of the year..the orginal recipe is from a woman named Joyce Randolph. She and her husband are missionaries. Read more ... Ingredients:
1/4 cup butter, softened |
1/2 cup sugar |
1 egg |
1 cup flour |
1-1/2 teasp. baking powder |
1/2 teasp.cinnamon |
1/4 teasp ground ginger |
1/4 teasp. salt |
1/2 cup cold mashed sweet potatoes |
2 tbsp. milk |
1/2 cup raisins |
1/4 cup pecans, chopped*** optional |
Directions:
1. in small mixing bowl: cream butter and the sugar 2. add egg and mix well 3. combine the flour, baking powder, cinnamon, ginger, and the salt. 4. add to the creamed mixture.. just until blended ( batter will be thick) 5. combine sweet potato and the milk 6. stir into the flour mixture until blended 7. fold in the raisins and the nuts 8. grease two ( 2) 5-3/4 x 3 inch loaf pans 9. divide batter between the 2 pans 10. bake in a preheated 350'F oven for 35 - 40 minutes or until they are lightly brown and a toothpick comes out clean 11. cool 10 minutes in the pan then remove and finish cooling on a wire rack 12. makes 2 mini loaves |
