Sweet Potato Latke With Lime Creme Fraiche |

Saw this on The Today Show, and it looked sooo good! Ingredients:
for lime creme fraiche |
2 t fresh lime juice |
1 t finely grated lime zest |
1 bunch fresh chives, finely chopped |
1 cup creme fraiche |
for latkes |
2 pounds sweet potatoes |
1 large red onion, very finely chopped |
kosher salt |
pinch of ancho chili powder |
pinch of nutmeg |
pinch of cinnamon |
3 eggs, beaten |
1 t baking soda |
1/4 cup matzoh |
1/3 cup flour |
Directions:
1. For Lime Creme Fraiche: 2. Mix all ingredients in a bowl and place in the fridge, allowing all the flavors to combine 3. For Latkes: 4. Shred the potatoes with the fine shredding attachment of a food processor or hand grater 5. Place in a colander and squeeze out the excess moisture as much as possible 6. Put the shredded potatoes in a bowl and add the onions, eggs, matzoh, flour and salt to taste 7. Mix in the spices 8. In a large, heavy skillet, heat 1/4 cup canola oil over high heat until very hot but not smoking 9. Squeeze 1/4 cup of batter one more time and drop into hot oil 10. Flatten with a spatula 11. Don't pit more than a few in the pan at one time 12. Lower the heat to medium 13. Regulate the heat carefully so you don't burn the cakes 14. Fry until golden brown on one side, then turn and brown the other side 15. Put finished Latkes on dry paper towels 16. Serve immediately with the creme fraiche |
