A healthy alternative to the regular cottage fries.
Ingredients:
4 cups sweet potatoes, peeled and sliced 1/4-inch
3 tablespoons oil
1 teaspoon salt
black pepper, to taste
Directions:
1. Cover peeled sliced potatoes with cool water. Refrigerate 20 minutes and drain.
2. Heat oil in skillet.
3. Add potatoes and saute, covered for 3 minutes over medium heat.
4. Uncover, raise heat and fry 5 minutes or until brown and crisp on both sides.
