A savory hash for people who think sweet potatoes are sweet enough already. Great as a side or brunch dish. Adapted from Cooking Light. Ingredients:
2 large sweet potatoes, peeled and shredded |
1 onion, chopped |
1 -2 red bell pepper, chopped |
3 slices bacon, diced |
2 tablespoons white wine or 2 tablespoons chicken broth |
1 teaspoon salt |
1 -2 teaspoon tony chachere's seasoning (or to taste) |
Directions:
1. In a large skillet, fry bacon pieces over med-high heat until browned. 2. Add onion and peppers to skillet and saute until onions are golden to slightly browned. 3. Add white wine or broth to pan to deglaze. Add sweet potatoes. Stir to combine. Cover and cook over medium heat until sweet potatoes are softened. 4. Season with salt and Cajun seasoning. 5. Serve warm. |
