Sweet Potato, Ham & Bean Salad |

This was in my Take 5 Ingredients Book, a great light meal in itself or side to a BBQ. Ingredients:
120 g leg ham, chopped |
1 kumara, peeled & diced |
120 g mixed salad greens |
1 red capsicum, diced |
300 g cannellini beans |
2/3 cup french dressing or 2/3 cup italian dressing |
Directions:
1. Boil, steam or microwave diced sweet potato until just tender, drain, combine with ham in a bowl. 2. Add the salad leaves, capsicum & beans and toss gently, add the dressing & toss again briefly. |
