Magazine recipe from a Brooklyn ,NY chef for this Thansgiving version of this delcious sweet potato and onion casserole Ingredients:
1/4 cup canola oil |
2 large onions thinly sliced |
8 medium sweet potatoes peeled |
2 cups heavy cream |
1 cup maple syrup |
salt and pepper |
Directions:
1. Heat oil in skilltet and saute onions till caramelized 2. Slice the potatoes very thin using a mandolin or hand slicer 3. Place potatoes in a large mixing bowl 4. Combine cream and maple syrup in a saucpan and scald mixture 5. Pour hot mixture over the potatoes, toss to coat well 6. layer potatoes in a 9 x 13 baking dish 7. Sprinikle salt over about 5 - 6 layers of potatoes 8. Pour on the remaining maple cream until it comes up about 3/4 over potatoes 9. Finish with a layer of the caramelized onions 10. Cover with foil and bake in a preheated 375 oven for 30 minutes 11. Uncover and bake about 20 minutes longer or potatoes are soft when tested with point of a knife 12. Remove from oven and let rest about 30 minutes before serving |
