SWEET POTATO FRITTERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamm Estate in Plano, Texas in 1999. Ingredients:
1 pound sweet potatoes peeled and coarsely shredded |
1 small white onion coarsely shredded |
3 large eggs |
3 tablespoons flour |
vegetable oil for frying |
Directions:
1. Spread potatoes and onion on clean dish towel then roll up. 2. Twist towel to extract excess moisture from vegetables. 3. Whisk eggs, flour, 1/2 teaspoon salt and 1/4 teaspoon pepper until smooth. 4. Heat 1/4 cup oil over medium high heat then add vegetables to batter and mix. 5. Spoon mixture into skillet allowing heaping tablespoon for each fritter. 6. Flatten slightly with back of spoon then fry six fritters at a time for 4 minutes. 7. Turn and cook 4 minutes longer then drain on paper towels and keep warm. |
