2 cups cooked, mashed sweet potatoes |
1/2 tsp. salt |
1 tsp. milk |
2 t. butter, melted |
3/4 cup crushed corn flakes |
Directions:
1. In a bowl, combine the sweet potatoes and salt. Mix well then add the milk. Shape into 6-8 balls. Dip into the melted butter then roll in the crushed corn flakes. Place the croquettes on a greased broiler pan. Broil for 5 minutes on each side or until golden brown. |
