These sweet potato croquettes were my grandmother's answer to sweet potato casserole at Thanksgiving. These are crunchy and delightful and then you get to the inside and they're gooey with this big hole where a marshmallow used to be! Read more ! Really good! Ingredients:
1/4 cup butter, melted |
1/2 cup milk |
1 teaspoon cinnamon |
1/2 teaspoon salt |
6 medium sweet potatoes |
marshmallows |
oil for deep frying |
flour |
1 egg |
corn flakes |
Directions:
1. Bake the sweet potatoes until they are very soft. 2. Skin the potatoes and place pulp in a bowl. 3. Add melted butter, milk, salt, and cinnamon. 4. Mix thoroughly and let cool completely. 5. When potatoes are completely cooled, wrap about 1/3 to 1/2 cup of mashed potatoes around a marshmallow creating a cone shaped croquette. 6. Beat egg until yolk and white are combined. 7. Dip croquette into flour, then egg and finally corn flakes. Be sure to press the corn flakes into the croquettes. 8. Chill croquettes about 20 minutes. 9. Heat oil is a deep fryer to 375 degrees. 10. Fry croquettes a few at a time until the corn flakes are browned. 11. Keep warm in a low oven until ready to serve. 12. NOTE: You can make these the day before and deep fry shortly before serving. They're great! |
