This is another Pennsylvania Dutch side dish. Ingredients:
12 pounds sweet potatoes |
3/4 cup margarine |
3 tsp salt |
1/2 cup brown sugar |
1/2 tsp black pepper |
5 eggs, beaten |
2-3 cups bread crumbs |
1 cup oil |
Directions:
1. Cook sweet potatoes until soft. Drain and peel them. Mash either by hand or with an electric mixer. Add margarine, salt, sugar and pepper. Mix well and refrigerate overnight. 2. Form mixture into croquettes in the shape of a small egg. Dip each in beaten egg then into crumbs. Fry in oil, turning until evenly browned. 3. These may be frozen....lay on cookie sheet lined with waxed paper and freeze. after croquettes are frozen, package and store in freezer. 4. To serve, heat in 325 degree oven for 20 minutes. |
