Sweet Potato Crisps And Cajun Dip |

I love sweet potatoes, these crisps are very good, but they have to be thinly sliced Ingredients:
2 cups thinly sliced sweet potatoes |
oil for frying |
dip |
1/2 cup light mayo |
1/2 cup light sour cream |
1 tbsp cajun seasoning |
1 tsp lemon juice |
1green onion, diced, chopped finely |
Directions:
1. Deep fry sweet potatoes in oil for 2 to 3 minutes. Remove with slotted spoon onto paper towels to drain. 2. DIP: combine all 5 ingredients in small bowl. Let sit a couple of hours to allow the flavors to blend. Makes 1 cup. |
