Sweet Potato Cranberry Bread |

Moist and healthy! Can substitute apple juice for cranberry concentrate and carrot juice-I just had them handy. Ingredients:
1 c whole wheat pastry flour |
1/2 c ground flaxseed |
1/2 c sucanat or brown sugar |
1 t baking soda |
1/2 t salt |
2 large eggs |
1 c mashed sweet potato |
1/4 c canola oil |
1/2 c unsweetened applesauce |
200 g cranberry concentrate (1 oz) |
3 oz carrot juice |
1/2 t cinnamon |
1/2 t ginger |
1/4 t nutmeg |
1 c dried cranberries |
Directions:
1. Preheat oven to 350 degrees. 2. Spray 8 X 4 pan with veg spray. 3. Mix dry ingredients together well. 4. Mix wet ingredients, including spices, well and add dried cranberries. 5. Add wet to dry and mix gently only until just moist. 6. Pour into pan and bake for about 1 hour, checking with toothpick after 50 minutes. Cool 10 min and turn out onto wire rack until completely cool. |
