Comfort food that is always a hit with our family. For rich-tasting sweet potatoes, mash in 1/2 cup milk and 2 tbsp butter. Ingredients:
2 teaspoons olive oil |
1 lb extra lean ground beef |
1 cup onion, chopped |
2 garlic cloves, minced |
1 teaspoon dried thyme |
1/4 teaspoon ground pepper |
4 teaspoons all-purpose flour |
1 1/2 cups beef broth |
1 teaspoon worcestershire sauce |
1 cup frozen mixed vegetables, thawed |
3 cups mashed sweet potatoes, hot |
Directions:
1. In large nonstick skillet, heat oil over medium-high heat. 2. Brown beef and onion, stirring often. 3. Stir in garlic, thyme and pepper; cook for 1 minute. 4. Stir in flour. 5. Add broth and Worcestershire. 6. Bring to boil, stirring, until thickened. 7. Stir in mixed vegetables. 8. Serve with sweet potatoes. |
