SWEET POTATO COOKIES This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Dallas, Texas in 1988. Ingredients:
1 cup sweet potatoes cooked and mashed |
3/4 cup brown sugar |
1/2 cup sugar |
1 egg |
3/4 cup unsalted butter |
1-1/2 cups all purpose flour |
1 teaspoon baking powder |
1/4 teaspoon cinnamon |
1/2 teaspoon nutmeg |
3/4 cup quick cooking oatmeal |
1 cup pecans |
1 cup raisins |
Directions:
1. Mix butter and sugar together then add eggs and dry ingredients then pecans and raisins. 2. Drop by teaspoons onto dry cookie sheets and bake for 12 minutes at 350. |
