Sweet Potato Clam Chowder |

Warm and tasty, rich and harty, so full of flaver. Ingredients:
12 sweet potatoes |
1 pint heavy cream |
64 ounces can clams with juice |
1 stick butter |
2 cups chopped onion |
2 cups chopped celary |
2 tablespoons minced garlic |
salt and pepper to taste |
Directions:
1. Bake sweet potatoes, wrapped in foil, in a 375 degree oven for about 90 minutes or until potatoes are cooked through let cool put potatoes through a ricer, this will remove the stringy fibers in the potato, if you don't mind the stringy stuff then just mash the potatoes 2. in a fry pan cook the onions,and celery in butter until soft, add garlic and cook just a little longer 3. put potatoes, onion mixture,cream, and clams with juice into a soup pot 4. add salt and pepper to your likeing heat soup and enjoy |
