A simple and tasty snack or side dish. Ingredients:
1 1/4 pounds sweet potatoes, peeled and cut into 1/8 inch slices |
1 tsp sugar |
1 tbsp lemon juice |
1 tbsp butter, melted |
salt to taste |
Directions:
1. Preheat oven to 350F. 2. Rinse potato slices & pat dry. Combine last 4 ingredients & mix well. Add potato slices and toss to coat. Place potatoes on foil lined cookie sheets. Pour any remaining liquid over top. Cover & seal. Bake for 30-35 minutes until tender. 3. Turn heat up to 425F. Uncover potatoes. Bake for an additional 3-5 minutes or until beginning to crisp & brown. |
