Ingredients:
2 1/2 pounds sweet potatoes, peeled and cut into 1/8-inch slices or as thinly as possible |

Directions:
1. In a bowl of cold water, place the sweet potatoes for at least 1 hour after slicing. Drain the potatoes and pat them dry.
