Great for a snack or side! Ingredients:
2 1/2 lbs sweet potato |
4 tsp olive oil |
1 1/2 tsp salt (flavored salt is nice, too! i used truffle salt) |
Directions:
1. Preheat oven to 450. 2. Slice sweet potatoes thinly or evenly with a mandolin slicer or sharp knife. 3. Toss and coat the sweet potatoes with the oil and salt. Spread out evenly in a single layer on a baking sheet (I needed 4 sheets) 4. Bake until crisp around edges and let cool. |
