Sweet Potato Casserole With Praline Topping |

This one can't decide if it's a veggie side dish or a dessert! either way, it's a required dish for thanksgiving in this house! Ingredients:
potato mixture |
3 large eggs |
5 lbs. fresh sweet potatoes or yams (6 cups) |
(boiled, drained, peeled & mashed |
2/3 cup granulated sugar |
2/3 cup butter or margarine, melted |
1/2 cup heavy cream |
1 tsp. vanilla |
1/2 tsp. each ground nutmeg & allspice |
praline topping |
1 cup light brown sugar, packed |
1/3 cup all-purpose flour |
1 cup finely chopped pecan |
1/3 cup butter or margarine |
(cut in small pieces) |
12 pecan halves (garnish) |
Directions:
1. Heat oven to 350° 2. grease a shallow 2 quart baking dish 3. potato mixture: in large bowl, beat eggs 4. stir in potatoes until blended 5. add remaining ingredients; mix well 6. spread evenly in prepared baking dish 7. topping: in medium size bowl, mix sugar, flour and nuts 8. work in butter with hands until well blended 9. sprinkle evenly over potato mixture 10. bake in oven for 6 to 70 minutes until topping is browned and bubbling 11. garnish |
