Sweet Potato Casserole With a crunch |

A very delicious sweet potato recipe with corn flake topping, rather than the usual flour mixture. Try it! Ingredients:
3 cups mashed sweet potatoes |
6 tablespoons margarine, melted |
1 1/2 cups sugar or 1 1/2 cups splenda sugar substitute |
1 cup evaporated milk or 1 cup skim milk |
2 eggs or 2 egg substitute |
1/2 teaspoon nutmeg |
1/2 teaspoon vanilla |
1/2 teaspoon cinnamon |
1/2 cup brown sugar, firmly packed |
6 tablespoons margarine, melted |
1 cup crushed corn flakes |
1/2 cup coarsely chopped pecans |
Directions:
1. Preheat oven to 400. 2. Mix all casserole ingredients and place in a small-medium glass baking dish. 3. Combine all topping ingredients, and cover the potatoes with the topping. 4. Bake for 15-20 minutes. |
