Sweet Potato Casserole VII |

My family likes the crunchy topping on these sweet potatoes. Ingredients:
3 cups mashed sweet potatoes |
1/2 cup white sugar |
2 eggs, beaten |
1/4 cup melted butter |
1/2 cup milk |
1 teaspoon vanilla extract |
1 cup packed brown sugar |
1/3 cup all-purpose flour |
3 tablespoons butter |
1 cup shredded coconut |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Spray one 2 1/2 quart casserole dish with non-stick cooking spray. 2. In a large bowl, combine the sweet potatoes, sugar, eggs, 1/4 cup butter, milk and vanilla. Pour into prepared casserole dish. 3. Mix together the brown sugar, flour, margarine and coconut; sprinkle over casserole. 4. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes. |
