Yummy, creamy sweet potatoes. Ingredients:
3 lbs sweet potatoes, peeled and cooked |
2 eggs, lightly beaten |
1/4 cup orange juice |
1/4 cup butter, softened |
1/2 cup brown sugar |
1 dash salt |
miniature marshmallow |
Directions:
1. Mash potatoes, add remaining ingredients.
2. Pour into greased 1-1/2 qt casserole dish.
3. Bake at 350* for 35 minutes.
4. Spread marshmallows over top.
5. Bake for 2 more minutes.
