This dish changes up the typical sweet potato/yam chunks served at the Holidays. Imagine smooth, creamy sweet potatoes, flavored with vanilla and brown sugar, topped with a crunchy nut topping and baked. You will never return to chunks of sweet potatos with marshmallows, again! Read more ! Ingredients:
4 1/2 cups cooked, mashed sweet potatos |
1/2 cup butter, melted |
1/3 cup whole milk |
1 cup white sugar |
1/2 tsp. vanilla extract(real stuff, no imitation) |
2 eggs, beaten |

1 cup light brown sugar |
1/2 cup all purpose flour |
1/3 cup cold butter |
1 cup chopped pecans (walnuts or almonds will do, as well) |
Directions:
1. Preheat Oven to 350. Grease a 9x13 baking dish/pan. 2. In a large bowl, combine mashed sweet potatoes, melted butter, milk, sugar, vanilla and eggs. Mix well and spread in baking pan. 3. In a small bowl, mix together brown sugar and flour. 4. Cut in cold butter until mix is crumbly. 5. Stir in pecans or nut of choice. 6. Sprinkle pecan mixture over the top of sweet potatoes, covering evenly. 7. Bake in preheated oven for 25 minutes or until golden brown. 8. Wait 10 minutes, spoon and serve! |
