I came up with this recipe using a combination of recipes from a cookbook called Calling All Cooks Two . This is one of my families favorites for Thanksgiving and Christmas dinner. I make two at a time, so I can cook one for Thanksgiving and freeze one for Christmas; saving precious holiday time with my family. Ingredients:
4 cups cooked sweet potatoes, drained |
1 cup granulated sugar |
2 eggs |
1/2 cup fresh orange juice |
1/8 teaspoon ground nutmeg |
1/2 teaspoon cinnamon |
1/2 teaspoon allspice |
1 cup milk |
1 cup brown sugar |
1/4 cup butter |
1 cup pecans |
1/2 cup flour |
Directions:
1. Using a large bowl mash sweet potatoes. 2. Add sugar, orange juice,spices and milk. 3. Beat eggs and add to sweet potato mixture. 4. Spread in a buttered casserole dish. 5. For the crumbled topping:. 6. melt 1/2 stick butter and mix well with the flour, chopped pecans and brown sugar. 7. Spread this topping over the sweet potato mixture. 8. Bake at 400 degrees for 35-40 minutes. |
