You can also add dry spices such as nutmeg, cinnamon and ginger to the sweet potato mix. Ingredients:
4 cups sweet potatoes |
1/2 cup splenda no calorie |
1 cup better'n eggs |
1/2 tsp. salt |
1 tsp. vanilla extract |
1/4 cup splenda brown sugar |
1/4 cup chopped pecans |
1/4 c all purpose flour |
2 tablespoons smart balance spread |
1/4 cup raisins |
Directions:
1. Preheat oven to 400 degrees and bake the sweet potatoes for 45-55 minutes 2. Set aside potatoes to cool 3. Reset oven to 350. 4. Spray 2 quart baking dish (I used a 11x7, 2 qt. dish) 5. Peel skins off potatoes. 6. Combine potatoes, splenda, egg substitute, salt, vanilla and blend in blender or food processor until smooth. 7. Spoon into dish 8. Topping 9. Stir together brown sugar, pecans, flour and butter spread (I used smart balance light with extra virgin oil) in a medium bowl. 10. Lightly sprinkle over sweet potato mix. 11. Sprinkle raisins (this is optional) 12. Spray with butter flavored spray 13. Bake 30 minutes or until golden brown |
