A sweet potato casserole with southern Louisiana roots makes this an excellent side dish year-round. Ingredients:
6 sweet potatoes |
1 1/2 cups sugar |
3/4 cup butter, melted |
3 eggs |
1 (5 ounce) can evaporated milk |
1 teaspoon fresh lemon juice |
1 teaspoon cinnamon |
1 teaspoon vanilla |
Directions:
1. Cover potatoes with water in a large saucepan, heat to a boil over medium heat, cook until fork-tender, about 45 minutes. 2. Drain; set aside to cool, about 10 minutes. 3. Heat oven to 375 degrees; peel potatoes. 4. Transfer to a large bowl; mash. 5. Stir in sugar, melted butter, blending well. 6. Add eggs, one at a time, blending smooth. 7. Stir in milk,lemon juice, cinnamon & vanilla, stirring just until well blended. 8. Transfer to a 3-quart casserole dish. 9. Bake until tip begins to brown, about 50 mintues. |
