Easy and delicious. You have to decide whether it's a vegetable or a dessert! I use Splenda for the sweetener. Ingredients:
3 large sweet potatoes |
3/4 cup artificial sweetener |
1/4 cup butter |
2 eggs |
1 tablespoon vanilla |
1 teaspoon nutmeg |
1 teaspoon cinnamon |
milk, to blend |
1/3 cup butter |
1/3 cup flour |
1 cup pecans |
1 cup brown sugar |
Directions:
1. Cook and mash sweet potatoes. 2. Mix first 7 ingredients and pour into casserole. 3. Bake at 350°F for 15 to 20 minutes. 4. Mix butter, flour brown sugar and pecans. Add topping and cook another 15 minutes. |
