This recipe is my own version of a few different recipes. Most of these casseroles are way too sweet for my taste so I've cut down on the sugar. Love this at Thanksgiving. Ingredients:
4 large sweet potatoes |
2 tablespoons butter |
3 tablespoons melted butter |
3 tablespoons flour |
1/2 cup brown sugar |
1/2 cup chopped pecans |
1/2 teaspoon cinnamon |
Directions:
1. Bake potatoes until tender and caramelized (about 45 min 400 degrees). 2. Take skin off when cooled and able to handle. 3. Put in a large bowl and mash with butter. 4. Pour into a buttered casserole and top with the pecan topping. 5. Bake at 350 degrees for 45 minutes. |
