Here we have another Sweet Potato recipe, but without the marshmallows. Pol Martin Cookbook. Ingredients:
4 large sweet potatoes, with skins |
4 slices bacon |
3 tablespoons butter |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/2 cup light cream |
1/4 cup milk |
salt, to taste |
black pepper, to taste |
Directions:
1. cook sweet potatoes in salted boiling water. when done, remove from water, peel and puree. 2. preheat over to 375*F. 3. cook bacon until crispy, then chop coarsely, and set aside. 4. incorporate all remaining ingredients, except bacon into pureed potatoes. mix well and correct seasonings. 5. place mixture in baking dish and cook 18 minutes in oven. sprinkle bacon over potatoes and continue cooking 5 minutes. 6. serve. |
