I got this recipe out of a newspaper and it was very good and needed to share this with you...I doctored the recipe some and it was a hit.. Ingredients:
3 lbs medium-size sweet potatoes |
1/2 cup firmly packed light brown sugar |
3 tablespoons butter, softened |
1/2 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
1/4 teaspoon salt |
1 cup milk |
2 tablespoons firmly packed brown sugar |
Directions:
1. In large saucepan, cook sweet potatoes in boiling salted water to cover. 2. Simmer till tender,about 15 min. 3. then drain. 4. Peel sweet potatoes and mash. 5. Stir in 1/2 cup brown sugar,butter,cinnamon,nutmeg,and salt. 6. Mix Well. 7. Blend in milk. 8. Pour seasoned sweet potato mixture into buttered 1 1/2 quart casserole dish or buttered individual bakers. 9. Sprinkle with remaining 2 Tablespoons brown sugar. 10. Bake in center of oven to 400 degrees for 30 min. 11. or until heated through. |
