I use yams that are fresh. I have never tried it with canned but I have heard that it will work too. Adjust the sugar in casserole and topping to desired sweetness. I have also used a lot more than 3 c of yams in my casserole. This was a recipe that everyone always asked me to make for all get togethers. Ingredients:
3 cups cooked sweet potatoes or 3 cups yams |
1/4 cup sugar |
1/4 cup softened butter |
salt |
1/2 cup evaporated milk |
3/4 cup brown sugar |
1/4 cup flour |
1/4 cup butter |
1 cup pecans |
Directions:
1. Mix yams with other ingredients until smooth. Place in greased pan. Combine toppings except pecans. Place on top of yam mix sprinkle pecans on top bake 45 min 350. |
